The Authentic Laksa Sarawak~


Tired of preparing the same menu every Syawal? Lets try something new! Its super easy, fast to prepare and it taste fabulous(your in-law will ask for the recipe)!!! Interested? Just order @ tailsstory@gmail.com !  


Ingredients
  • 750g of Bee Hoon
  • 1.2 kg of medium-sized prawns
  • 1.5 kg chicken breast
  • 5 eggs
  • 500g of bean sprouts
  • 16 to 20 pieces of Kasturi lime
  • 400 grammes of Haji Manan Sarawak Laksa paste
  • Coconut milk from 1 1/2 coconuts
  • Some lemongrass
  • Salt and sugar to taste
  • 5 Litter of water
  • Coriander leaves (for garnishing)
Method

Boil 5 litres of water in a stock pot. Upon boiling, add 2 teaspoons of salt followed by chicken breast. Boil till chicken is thoroughly cooked, then toast it. Boil the prawns till they start to float indicating that they are cooked then toast and place prawn aside. Once both stock are cooked, Add Sarawak Laksa paste together with lemongrass and let it boil at medium to high heat for at least 30 minutes. Add water, salt and sugar to taste.

While waiting, remove head and shell from prawn and finely shred the chicken meat using fingers Place shredded chicken meat & prawn aside. Beat eggs and fry them thinly on a frying pan. Cut into fine strips. Set aside.

Next, cook the pre-soaked beehoon in 4 to 5 batches by blanching them in boiling water for at least 1 minute. Drain and set aside. Its almost done!

To serve, first place cooked beehoon on a bowl. Add beansprouts, shredded chicken, prawns and egg strips. Then pour the laksa soup over the ingredients.

Garnish with coriander leaves and lime before serve. You can prepare this while the family is out for Eid Fitr prayer! Enjoy!

Kek Lapis Masam Manis (No.34)
This would be the pioneer of our favourites. Not only it looks handsome on that platter of yours (Mak Midah might compliment that handsome cake first), it also tastes great (Mak Midah will be jealous of you for having this delicious selection). Sweet with a linger of sour plum.

Kek Lapis India Cadbury (No.24)
This was the epitome of luxury when they first started. It cost a hefty back then, considering the inflation rate. The price never hiked though, making this an affordable luxury now. Properly arranged Cadbury Chocolate Milk will leave a sensation as you sink your teeth in this undoubtly wise selection.

Kek Lapis Blueberry (No.6)
This subtle flavour of not-too-sweet cake is just what you need after all that heavy carbonated drinks and all the lemangs and rendangs.

Kek Lapis Sisik Ikan (No.43)
Where else could you find a cake which is named after a fish's scales? This might sound fishy, but the cake itself is one of the most tasty we ever came across. It tastes sweet & sour all at the same time.

Kek Lapis Evergreen (No.20)
As the name suggests, this cake is common to cake lovers and bakers alike. But don't let the over commercialize name fool you. This one in particular is a must try. It tastes a sweet (like all other cakes), with vanilla, kaya & fragrant screw-pines (pandan) flavour & smell. Bring back memories of kampung.

Not necessarily that of many layers this one. But this modest look will blow you away as the rich taste of cheese and chocolate tingles every little taste buds you have.

Kek Lapis Strawberry Prune(No.44)
Tastes as sweet as it looks. Don't you just like pink & strawberries? (You there, stop living in denial). Don't it just look demure next to that jar of sirap limau you serve there?

Kek Lapis Madu Belang (No.31)
Made from chocolate & nestum. A healthy cake if you ask us. But unlike other healthy products, this actually tastes good. Just look at how beautiful it is from the top. Kids dig this.

Hati Pari (No.49)
One of the worth mentioning non-layered cakes. Dark cake that no one could ever mistaken its taste. It tastes of prunes and raisins with firm texture. It took 8 hours to bake and can lasts as long as 1 year in your refrigerator! Some even say the longer you keep it, the better it gets.
